evaporated milk /ivap″ərā′tid/ , homogenized whole milk from which 50% to 60% of the water content has been evaporated. It is fortified with vitamin D, canned, and sterilized. When it is diluted with an equal amount of water, its nutritional value is comparable to that of fresh whole milk.
